The professors introduced me to some of the top coffee scientists in the world and some of the leading doctors on the subject of coffee and health. Before I knew it – I’d assembled a world-class inner circle of coffee experts! Here are a few of the highlights of what I discovered:
What science knows about coffee, but most consumers DON’TCoffee is the world’s most consumed beverage, after water – and one of the most “well-researched” food products on earth. In fact, over 19,000 scientific studies have been conducted on coffee and health. Coffee got its bad reputation as an unhealthy vice during the 1950s, with several research studies linking it to dozens of diseases and disorders, including pancreatic cancer, lung cancer, breast lumps, birth defects and heart disease. However, more modern science discovered a major flaw in those early studies… According to the New England Journal of Medicine, the Mayo Clinic and others, the 50s studies failed to differentiate between the causal effects of coffee consumption and heavy smoking, excessive alcohol consumption and lack of physical activity. When the New England Journal of Medicine controlled the original data for these negative behaviors, the findings literally reversed. This caused the USDA to award coffee a “strong” health grade in early 2015, stating; “Strong and consistent evidence shows that consumption of coffee within the moderate range is not associated with increased risk of major chronic diseases, such as cardiovascular disease and cancer and premature death in healthy adults.” But, the damage to coffee’s reputation had already been done. From the 1950s forward, the general public would associate coffee with vice, believing that science had declared it unhealthy. However, now we know that nothing could be further from the truth! They showed that coffee drinkers experienced a reduction of many leading causes of death, including heart disease, chronic lower respiratory diseases, diabetes, influenza and pneumonia! This confirmed findings from two similar (and very large) studies, which showed that moderate coffee consumption was associated with a 20% lower risk of premature death in men and a 26% lower risk of death in women, over a period of 18-24 years.

Even organic coffees often use substandard beans.Organic beans aren’t soaked in pesticides, but unfortunately, many organic coffees don’t get proper nutrients, which can result in defective or low quality beans and insect damage.

This is why the mass market producers—even of the fancy, high-end coffees—seldom, if ever, print a “roasted on” date on their labels. Sure, they will often print a “best used by” date, which can be FAR off in the future, but not a “roasted on” date, because they realize that savvy coffee lovers prize freshness. These companies don’t want you to know how old and stale their coffee has become during it’s torturously slow journey from their production facilities to your local store! Their financial model relies on an extremely long shelf life and a consumer who assumes their coffee is fresh! What a waste! Step 2: Our scientific roasting protocolA highly complex series of chemical reactions occur during the roasting process, which few coffee companies understand (but our scientists do!) This is why most dark roasted coffees, such as French roast, have lower CGA levels and higher levels of PAHs (a known carcinogen). If coffee is under-roasted, a carcinogen called acrylamide will likely be present, and our tests have demonstrated this to be the case. So, from a health perspective, the optimal roast is a true balancing act. We call this: “the Purity ratio”. Through extensive testing and retesting, our scientists and roasters analyze the results of different roasting time and temperatures, so we can discover which roast curve nets the most positive health attributes.
