This exceptional coffee comes from 18 Conejo, a women-led, family-owned farm in Honduras that honors ancient Mayan agricultural traditions to nurture the soils and produce nutritious, flavorful coffee. They descend from the ancient Lenca, the largest indigenous group in Honduras who align rituals of nature with their agricultural practices.

As the first demeter certified biodynamic coffee farm in Central America, 18 Conejo integrates ecological science with spiritual practices to restore soil health and promote holistic farming.     So good

    This coffee is so good that I truly look forward to that moment of the first sip in the morning. I make it using an aeropress, 15 grams of coffee, ground at number 12 on the baratza grinder, and 1 cup of water. The flavor profile is as described by Purity with no bitterness. It is a special bean. Love it!

    Full of Surprises

    Right when I opened the bag, I knew I had something special. It checked all the right boxes for me: a zesty, temperamental aroma; light roast, leaning medium; and a crystalline crunch in my hand-grinder, indicative of a dense bean. However, I was very disappointed by my first attempts at brewing it. I wanted to do right by such a wonderful bean, so I broke out the french press, but even after accounting for its high density and therefore upping the water temperature and brew time and reducing the grind size to what would be appropriate for a pour-over, I was still left with something closer to coffee flavoured tea. It didn’t fare much better in my aeropress either. I have since realized that this has been a recurring theme with the last three Purity coffees I have tried. I suspect that whatever proprietary processes they employ (smokeless roasting for example) in order to make their products more healthy may have a subduing effect on the flavour profile… but I digress! Looking for more extraction, I decided to offer it up to my espresso machine, and, just WOW! It was everything I had hoped for and more! I used the recipe from a comparable light roast, and it brought out the full flavour and aroma I had been chasing ever since I opened the bag: warm, bright and complex, with mild berry tones and a lighter, smooth mouthfeel typical of light-roast espressos. For those interested, the recipe is: 20grams in/40grams out @ 87 degrees, for a 20 second preinfusion + approx 25…
