The Coffee and the Process

Most instant coffee starts with commodity beans bought on price alone.

We start with specialty-grade, single-origin coffees scored 84+ by the Specialty Coffee Association. These are the same quality beans we offer as whole bean coffee.

But we go further.

We select beans based on their antioxidant potential, specifically chlorogenic acids (CGAs), the compounds responsible for many of coffee’s researched health benefits. Not all specialty coffee is high in CGAs.

We test before we buy.

Then we protect what matters.

Freeze-dried, not spray-dried.
Gentle freeze-drying preserves aroma, sweetness, and antioxidant content. Spray-drying destroys them.

Roasted to maximize health benefits.
Our roast curves are designed to preserve chlorogenic acids, not accidentally destroy them like most roasters do.
