EASE: Dark Roast Ground Coffee

The country of origin, variety, processing method, and roasting (different temperatures, lengths of time) of the coffee can highlight some of the naturally occurring flavors/compounds. You can read more about our standards here: https://puritycoffee.com/pages/purity-process A potential carcinogen, PAHs (polycyclic aromatic hydrocarbons) begin forming the longer and darker you roast coffee, so we stop roasting short of when those form. For that reason, Ease would not be as dark as something like a French or Italian Roast. But if the taste is sour, there's a few ways to combat that, as it's usually from under-extraction. Grinding finer is the first thing to try. If the grounds are too coarse for your brew method, you won't extract as much flavor. You want to aim for the water temperature to be between 195-205ºF, i.e. just below boiling temperature. You can try edging toward the higher end of that range to ensure proper extraction. Another variable is your coffee:water ratio. A good starting point is a 1:15 ratio, or 2 tablespoons to 8oz of water. Try adding just a bit more water through to increase the ratio and combat sourness. With all of that said, it's important to only change one variable at a time, otherwise you won’t know which change led to your desired taste profile.
