A Living Relationship with the Inga
This coffee comes from the Inga community of Aponte in the mountains of Nariño, Colombia. They are guardians of their territory, and their farming reflects long-term stewardship, not short-term yield. Grown at high elevation in mineral-rich volcanic soil, the cup expresses clarity, balance, and depth.
We've walked these farms and built direct relationships with the producers. They set the price. They define their reinvestment goals. Every purchase supports their vision for ecological care, cultural continuity, and economic dignity.

Aponte Inga Decaf is different. We use a natural sugar cane process that bonds with caffeine and lifts it out gently, while leaving the coffee's natural sweetness, antioxidants, and character intact.

FAQs
Yes. We use a natural sugar cane process that derives its solvent from fermented sugarcane and vinegar — no synthetic chemicals like methylene chloride are ever used.
Both are chemical-free. Mountain Water uses pure water, temperature, and time. Sugar cane decaffeination uses ethyl acetate naturally derived from fermented sugarcane. Sugar cane is especially loved in the specialty coffee world for how well it preserves a coffee's natural sweetness.
The Inga community grows this coffee using regenerative, time-honored practices that meet or exceed organic standards, but the community does not have access to the formal USDA certification process. We work with them directly to honor the way they farm.

That's exactly what it's made for. This lot was decaffeinated intentionally so the ritual can continue any time of day.
The sugar cane process removes the majority of caffeine while preserving flavor. Like all decaf coffees, trace amounts may remain.

I love coffee but the caffeine gives my heart ectopy (extra heart beats out of sync). So I decided to try decaf. These beans are medium roast and have a really nice flavor. I love bitterness and my cup of Purity definitely fits the bill! Delicious!

This is just delicious!
This is definitely a great brew. I am loving it. I never bothered to drink decaf coffee. I did, however, just purchase a fully automatic coffee machine that I was enjoying very much! Due to a medical condition, I have been advised to limit caffeine, at least for awhile. This coffee has made it easy. I am absolutely loving it!!

Bold, rich, strong, and crafted with love
Bold and richly aromatic from first opening the bag to the freshly brewed cup. I like the stronger and darker flavor this brings compared to the calm decaf product. Love this decaf
